Low Carb Enchiladas Suizas – Keto Enchiladas Suisse Recipe

We successfully tackled a favorite recipe for Enchiladas Suizas, also called Enchiladas Suisse. This delicious, creamy, casserole-style dish easily lends itself to a low carb version with a few alterations from the original recipe.

For this low carb version, we needed to replace the tortillas with a low carb alternatives. You can use a commercial low carb tortilla if that fits in your diet plan and goals. This is a low carb remake of a very popular Americanized dish from the Yucatan.

Ingredients

  • chopped onion

  • 1 clove minced garlic

  • 1 tablespoon bacon fat or oil

  • 8 oz can tomato sauce + 1 can water

  • 4 oz can chopped green chiles (do not drain)

  • 3 cups cooked chicken, chopped

  • 2 cups heavy whipping cream

  • 1/2 cup water

  • chicken bouillon (or equivalent)

  • 1/2 pound Swiss cheese, grated

  • Salt & pepper to taste

  • 10 each low carb tortillas

Directions

  • Preheat oven to 350˚F.
  • Over medium heat, saute the onion in the oil util soft and translucent.
  • Add garlic, tomato puree, chilis and chicken.
  • Simmer for 10 minutes. Season to taste with salt and pepper
  • Gently heat the 2 cups of heavy cream and 1/2 cup of water over low heat and dissolve bouillon in cream.
  • Fill each with 1/4 cup of the chicken mixture. Roll up tortillas and place seam-side down in a 9×13 casserole dish.
  • Pour the cream mixture over tortillas and sprinkle with the grated cheese.
  • Bake at 350˚F for 30 minutes.

        I had a question about the recipe which says:
        “8 can can tomato sauce + 1 can water”

        Do you mean 8 oz can? Not sure what 8 can can means!

        I see you corrected the tomato sauce but now the green chilies say can can. I remembered because I made my shopping list from the video. What in the world is your computer doing 😹 Thanks for the great recipe. I made it once before and am so looking forward to having it again!
