These chocolate cocoa coconut bites are a delicious end to any meal, or can be eaten as a keto “fat bomb” to increase fat intake.

Ingredients

  • Cream Together
  • 3/4 cup coconut flour

  • 1/4 cup almond flour

  • 1/4 cup oat fiber

  • 1 teaspoon xanthan gum (optional)

  • 2 tablespoon cocoa powder

  • Then Add
  • 16 oz. cream cheese

  • 2 eggs

  • 1 cup erythritol confectioners sweetener (like Swerve)

  • 4 tablespoon butter

  • 1 teaspoon vanilla extract (optional)

Directions

  • Preheat oven to 350˚F.
  • Using a spoon or measuring scoop, portion 30 “bites” onto a parchment-lined baking sheet.
  • Bake at 350 degrees for 20 minutes.
  • Allow to cool. Store in airtight container in the refrigerator.
