Cabbage “steaks?” You bet! These delicious, caramelized cabbage rounds are extremely fast and easy to make. You can use either red or green cabbage. Both are delicious, but I usually select red to get all the heart-healthy anthocyanins that make the cabbage red. The outer edges will get very dark and crispy. (I find that to be the best part.) Enjoy these with your favorite meat or poultry dish; they’re perfect alongside an actual steak.

You can make this recipe with green or red cabbage. Enjoy with your favorite protein or alongside an actual steak!

Ingredients

  • 1 head red or green cabbage

  • 2 tablespoons olive oil or melted bacon fat

  • 1 teaspoon salt

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon freshly ground black pepper

Directions

  • Preheat the oven to 400°F. Line a large baking sheet with aluminum foil.
  • Remove any loose or dark leaves from the outside of the cabbage, and place it stem-side down on a cutting board. Use a sharp knife to slice the cabbage lengthwise into 6 even slices about 1 inch thick.
  • Place the cabbage “steaks” on the baking sheet. Brush or drizzle with the oil.
  • Sprinkle the steaks with the salt, pepper, garlic powder, and onion powder.
  • Roast on the center oven rack for 15 to 20 minutes or until caramelized. Serve warm.
